Chicken Moussakhan

Ingredients
- Chicken thighs - 300 grams
- Onions - 2 medium, sliced
- Extra virgin olive oil - 3 tablespoons
- Sumac - 2 teaspoons
- Allspice - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
- Cauliflower flatbread - 2 pieces
Steps
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 15 minutes.
- While the onions are cooking, season the chicken thighs with sumac, allspice, cinnamon, salt, and black pepper.
- In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the seasoned chicken thighs and sear for 5 minutes on each side until golden brown.
- Add the minced garlic to the caramelized onions and cook for an additional 2 minutes until fragrant.
- Place the seared chicken thighs on top of the caramelized onions in the skillet, cover, and cook for another 15 minutes until the chicken is cooked through.
- Meanwhile, toast the pine nuts in a dry skillet over medium heat until golden brown, about 3-4 minutes, stirring frequently.
- Once the chicken is cooked, remove from heat and sprinkle toasted pine nuts and chopped parsley over the top.
- Serve the chicken and onion mixture over cauliflower flatbread.
