Chicken Moussakhan

Chicken Moussakhan is a traditional Lebanese dish that features tender, spiced chicken cooked on a bed of caramelized onions and served on flatbread. This Paleo version retains the essence of the original while being health-conscious and flavorful.

Ingredients

  • Chicken thighs - 300 grams
  • Onions - 2 medium, sliced
  • Extra virgin olive oil - 3 tablespoons
  • Sumac - 2 teaspoons
  • Allspice - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped
  • Cauliflower flatbread - 2 pieces

Steps

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 15 minutes.
  2. While the onions are cooking, season the chicken thighs with sumac, allspice, cinnamon, salt, and black pepper.
  3. In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the seasoned chicken thighs and sear for 5 minutes on each side until golden brown.
  4. Add the minced garlic to the caramelized onions and cook for an additional 2 minutes until fragrant.
  5. Place the seared chicken thighs on top of the caramelized onions in the skillet, cover, and cook for another 15 minutes until the chicken is cooked through.
  6. Meanwhile, toast the pine nuts in a dry skillet over medium heat until golden brown, about 3-4 minutes, stirring frequently.
  7. Once the chicken is cooked, remove from heat and sprinkle toasted pine nuts and chopped parsley over the top.
  8. Serve the chicken and onion mixture over cauliflower flatbread.
