Ingredients

  • Chicken thighs - 500 grams, boneless and skinless
  • Garlic - 4 cloves, minced
  • Lemon juice - 60 ml (about 1/4 cup)
  • Olive oil - 30 ml (about 2 tablespoons)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 30 grams, chopped (for garnish)
  • Lemon wedges - for serving

Steps

  1. In a mixing bowl, combine minced garlic, lemon juice, olive oil, ground cumin, ground coriander, paprika, salt, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade, allowing any excess to drip off. Discard the leftover marinade.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C (165°F).
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  7. Slice the chicken and serve garnished with fresh parsley and lemon wedges.
