Ingredients
- Chicken thighs - 500 grams, boneless and skinless
- Garlic - 4 cloves, minced
- Lemon juice - 60 ml (about 1/4 cup)
- Olive oil - 30 ml (about 2 tablespoons)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 30 grams, chopped (for garnish)
- Lemon wedges - for serving
Steps
- In a mixing bowl, combine minced garlic, lemon juice, olive oil, ground cumin, ground coriander, paprika, salt, and black pepper to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
- Preheat a grill or grill pan over medium-high heat.
- Remove the chicken from the marinade, allowing any excess to drip off. Discard the leftover marinade.
- Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C (165°F).
- Once cooked, remove the chicken from the grill and let it rest for a few minutes.
- Slice the chicken and serve garnished with fresh parsley and lemon wedges.
