Ingredients

  • Chicken livers - 300 grams

  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Skewers - 4 (if using wooden skewers, soak them in water for 30 minutes)

Steps

  1. In a bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
  2. Add the chicken livers to the marinade and toss well to ensure they are evenly coated. Let them marinate for 15 minutes.
  3. While the livers are marinating, soak the skewers in water if using wooden ones.
  4. Thread the marinated chicken livers onto the skewers, leaving a little space between each liver.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Cook the skewers for about 3-4 minutes on each side, or until the livers are browned and cooked through.
  7. Remove from the grill and drizzle with lemon juice and sprinkle with chopped parsley before serving.
