  • Chicken livers - 250 grams
  • Unsalted butter - 50 grams

  • Cumin - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Allspice - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a skillet, melt the butter over medium heat and sauté the chopped onion until translucent.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high, add the chicken livers, and cook until browned on the outside but still slightly pink inside, about 5-7 minutes.
  4. Stir in the cumin, cinnamon, allspice, salt, and black pepper, cooking for another 2 minutes to combine the flavors.
  5. Remove the skillet from heat and let the mixture cool slightly before transferring it to a food processor.
  6. Add the fresh parsley and lemon juice to the food processor with the liver mixture, and blend until smooth and creamy.
  7. Taste and adjust seasoning if necessary, then transfer the pâté to a serving dish and chill in the refrigerator for at least 30 minutes before serving.
