Ingredients

  • Chicken breast - 300 grams
  • Yogurt - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bell peppers - 100 grams, chopped
  • Red onion - 50 grams, chopped
  • Cherry tomatoes - 100 grams
  • Pita bread - 2 pieces
  • Fresh parsley - for garnish

Steps

  1. In a mixing bowl, combine yogurt, olive oil, minced garlic, lemon juice, cumin, coriander, paprika, salt, and black pepper to create the marinade.
  2. Cut the chicken breast into bite-sized pieces and add to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Thread the marinated chicken onto skewers, alternating with pieces of bell peppers, red onion, and cherry tomatoes.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. While the kebabs are grilling, warm the pita bread on the grill for 1-2 minutes on each side until slightly charred.
  7. Serve the chicken kebabs hot with warm pita bread and garnish with fresh parsley.
