- Freekeh - 150 grams
- Chicken thighs, boneless and skinless - 300 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Cinnamon stick - 1
- Cumin powder - 1 teaspoon
- Allspice powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 500 ml
- Fresh parsley, chopped - 2 tablespoons
- Lemon, juiced - 1
Steps
- Rinse the freekeh under cold water and soak it in warm water for 30 minutes, then drain.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced carrot to the pot and cook for another 2-3 minutes until fragrant.
- Season the chicken thighs with salt, black pepper, cumin, and allspice. Add the chicken to the pot and brown on all sides for about 5-7 minutes.
- Pour in the chicken broth and add the cinnamon stick. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes.
- Add the drained freekeh to the pot, stir gently, and ensure the freekeh is submerged in the broth. Cover and simmer for an additional 20 minutes, or until the freekeh is tender and the chicken is cooked through.
- Remove the pot from heat, discard the cinnamon stick, and stir in the lemon juice and chopped parsley. Adjust seasoning if needed.
- Serve the Chicken Freekeh warm, garnished with additional parsley if desired.
