Chicken Fatteh

Ingredients

  • Boneless chicken breast - 250 grams
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pita bread - 2 small, cut into strips
  • Greek yogurt - 100 grams
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 50 ml
  • Pine nuts - 2 tablespoons, toasted
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. In a bowl, combine the minced garlic, ground cumin, ground coriander, olive oil, salt, and black pepper. Add the chicken breast and marinate for at least 15 minutes.
  2. While the chicken is marinating, preheat the oven to 180°C (350°F). Arrange the pita bread strips on a baking sheet and lightly brush with olive oil. Bake for 10-12 minutes until golden and crispy.
  3. In a skillet, cook the marinated chicken over medium heat for about 5-7 minutes on each side or until cooked through. Remove from heat and let it rest before slicing it into strips.
  4. In a bowl, whisk together the Greek yogurt, tahini, lemon juice, and water until smooth to create the sauce.
  5. To assemble, place a layer of crispy pita bread on each serving plate, top with sliced chicken, drizzle with the yogurt-tahini sauce, and sprinkle with toasted pine nuts and chopped parsley.
