Ingredients
- Boneless chicken breast - 250 grams
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pita bread - 2 small, cut into strips
- Greek yogurt - 100 grams
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 50 ml
- Pine nuts - 2 tablespoons, toasted
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- In a bowl, combine the minced garlic, ground cumin, ground coriander, olive oil, salt, and black pepper. Add the chicken breast and marinate for at least 15 minutes.
- While the chicken is marinating, preheat the oven to 180°C (350°F). Arrange the pita bread strips on a baking sheet and lightly brush with olive oil. Bake for 10-12 minutes until golden and crispy.
- In a skillet, cook the marinated chicken over medium heat for about 5-7 minutes on each side or until cooked through. Remove from heat and let it rest before slicing it into strips.
- In a bowl, whisk together the Greek yogurt, tahini, lemon juice, and water until smooth to create the sauce.
- To assemble, place a layer of crispy pita bread on each serving plate, top with sliced chicken, drizzle with the yogurt-tahini sauce, and sprinkle with toasted pine nuts and chopped parsley.
