Ingredients
- Chicken breast - 300 grams
- Cauliflower - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Plain yogurt - 100 grams
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- Spread the cauliflower rice on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast in the oven for 20 minutes until golden.
- While the cauliflower is roasting, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the chicken breasts to the skillet, season with cumin, coriander, cinnamon, salt, and pepper. Cook for about 6-8 minutes on each side until fully cooked and no longer pink in the center.
- Remove the chicken from the skillet, let it rest for a few minutes, then slice it into strips.
- In a small bowl, mix the yogurt with lemon juice and a pinch of salt.
- To serve, place the roasted cauliflower rice on a plate, top with the sliced chicken, drizzle the yogurt sauce over, and garnish with fresh parsley.
