Ingredients

  • Chicken breast - 200 grams

  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Long-grain rice - 100 grams
  • Chicken broth - 1 liter
  • Turmeric - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  2. Add the chicken breast to the pot and cook until lightly browned on all sides, about 5 minutes.
  3. Stir in the turmeric, cinnamon, salt, and black pepper, mixing well with the vegetables and chicken.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer for 15 minutes, until the chicken is cooked through.
  5. Remove the chicken from the pot, shred it, and return the shredded chicken to the soup.
  6. Add the rice to the pot and simmer for an additional 15 minutes, or until the rice is tender.
  7. Stir in the fresh parsley and lemon juice before serving.
