- Long-grain rice - 100 grams
- Chicken broth - 1 liter
- Turmeric - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Add the chicken breast to the pot and cook until lightly browned on all sides, about 5 minutes.
- Stir in the turmeric, cinnamon, salt, and black pepper, mixing well with the vegetables and chicken.
- Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer for 15 minutes, until the chicken is cooked through.
- Remove the chicken from the pot, shred it, and return the shredded chicken to the soup.
- Add the rice to the pot and simmer for an additional 15 minutes, or until the rice is tender.
- Stir in the fresh parsley and lemon juice before serving.
