- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Salt - 5 grams
- Olive oil - 30 ml
- White cheese (like Akkawi or feta) - 100 grams, crumbled
- Mozzarella cheese - 50 grams, shredded
- Za'atar spice mix - 1 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until the dough comes together, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- Preheat your oven to 220°C (428°F). Line a baking sheet with parchment paper.
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a round shape (about 20 cm in diameter).
- Transfer the rolled dough onto the prepared baking sheet. Sprinkle the crumbled white cheese and shredded mozzarella evenly over the top.
- Sprinkle za'atar and black pepper over the cheese.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the cheese is bubbling.
- Remove from the oven, let it cool for a minute, then slice and serve warm.
