Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Salt - 5 grams
  • Olive oil - 30 ml
  • White cheese (like Akkawi or feta) - 100 grams, crumbled
  • Mozzarella cheese - 50 grams, shredded
  • Za'atar spice mix - 1 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until the dough comes together, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat your oven to 220°C (428°F). Line a baking sheet with parchment paper.
  6. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a round shape (about 20 cm in diameter).
  7. Transfer the rolled dough onto the prepared baking sheet. Sprinkle the crumbled white cheese and shredded mozzarella evenly over the top.
  8. Sprinkle za'atar and black pepper over the cheese.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the cheese is bubbling.
  10. Remove from the oven, let it cool for a minute, then slice and serve warm.
