Ingredients

  • Phyllo dough - 4 sheets
  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Mozzarella cheese - 50 grams, shredded
  • Egg - 1, beaten
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the crumbled feta, ricotta, mozzarella, beaten egg, chopped parsley, salt, and black pepper until well mixed.
  3. Lay one sheet of phyllo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush again.
  4. Cut the layered phyllo into 4 equal strips.
  5. Spoon a tablespoon of the cheese mixture at one end of each strip.
  6. Fold the phyllo over the filling to form a triangle, and then continue folding the triangle along the strip until you reach the end. Seal the edge with a little olive oil.
  7. Place the bourekas on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with sesame seeds if using.
  8. Bake in the preheated oven for about 15-20 minutes or until golden brown and crispy.
  9. Remove from the oven and let cool slightly before serving.
