Cheese Bourekas

Ingredients
- Phyllo dough - 4 sheets
- Feta cheese - 100 grams, crumbled
- Ricotta cheese - 100 grams
- Mozzarella cheese - 50 grams, shredded
- Egg - 1, beaten
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame seeds - 1 tablespoon (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the crumbled feta, ricotta, mozzarella, beaten egg, chopped parsley, salt, and black pepper until well mixed.
- Lay one sheet of phyllo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush again.
- Cut the layered phyllo into 4 equal strips.
- Spoon a tablespoon of the cheese mixture at one end of each strip.
- Fold the phyllo over the filling to form a triangle, and then continue folding the triangle along the strip until you reach the end. Seal the edge with a little olive oil.
- Place the bourekas on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with sesame seeds if using.
- Bake in the preheated oven for about 15-20 minutes or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
