  • Paprika - 1 teaspoon
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Water - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. Wash and slice the zucchini, red bell pepper, yellow bell pepper, and eggplant into thick slices.
  3. Peel and cut the red onion into quarters, keeping the layers together.
  4. In a large bowl, toss the vegetable slices with olive oil, salt, black pepper, and paprika until evenly coated.
  5. Place the vegetables on the grill and cook for about 4-5 minutes on each side, or until they are nicely charred and tender.
