Ingredients
- Cauliflower - 200 grams, chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 1/4 cup, finely chopped
- Fresh mint - 2 tablespoons, finely chopped
- Tomato - 1 medium, diced
- Red onion - 1/4 cup, finely chopped
- Lemon juice - 1 tablespoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 3 tablespoons
- Whole wheat burger buns - 2
- Lettuce leaves - 2
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, toss the chopped cauliflower with 1 tablespoon of olive oil and minced garlic. Spread it on a baking sheet and roast for 20 minutes until tender and slightly golden.
- Once the cauliflower is roasted, let it cool for a few minutes. Then, transfer it to a mixing bowl and mash it lightly with a fork.
- Add the parsley, mint, diced tomato, red onion, lemon juice, cumin, salt, black pepper, and chickpea flour to the mashed cauliflower. Mix until well combined.
- Form the mixture into two burger patties.
- In a non-stick pan, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for 3-4 minutes on each side, until golden brown.
- Assemble the burgers by placing each patty on a whole wheat bun topped with fresh lettuce. Serve immediately.
