Ingredients

  • Cauliflower - 300 grams, cut into florets
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Pita bread - 2 pieces
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 2 tablespoons
  • Cucumber - 1/2, sliced
  • Tomato - 1 medium, sliced
  • Red onion - 1/4, thinly sliced
  • Fresh parsley - a handful, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, toss the cauliflower florets with olive oil, cumin, coriander, paprika, turmeric, salt, black pepper, and garlic powder until evenly coated.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and golden brown, flipping halfway through.
  4. While the cauliflower is roasting, prepare the tahini sauce by mixing tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth and creamy.
  5. Once the cauliflower is done, remove it from the oven and let it cool slightly.
  6. To assemble the burgers, warm the pita bread in the oven for a couple of minutes or on a skillet.
  7. Place a generous amount of roasted cauliflower on each pita, followed by slices of cucumber, tomato, and red onion.
  8. Drizzle with tahini sauce and sprinkle with chopped parsley before folding the pita to enclose the filling.
