- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic powder - 1/2 teaspoon
- Pita bread - 2 pieces
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons
- Cucumber - 1/2, sliced
- Tomato - 1 medium, sliced
- Red onion - 1/4, thinly sliced
- Fresh parsley - a handful, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, toss the cauliflower florets with olive oil, cumin, coriander, paprika, turmeric, salt, black pepper, and garlic powder until evenly coated.
- Spread the seasoned cauliflower on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and golden brown, flipping halfway through.
- While the cauliflower is roasting, prepare the tahini sauce by mixing tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth and creamy.
- Once the cauliflower is done, remove it from the oven and let it cool slightly.
- To assemble the burgers, warm the pita bread in the oven for a couple of minutes or on a skillet.
- Place a generous amount of roasted cauliflower on each pita, followed by slices of cucumber, tomato, and red onion.
