- Bell pepper - 1 small, diced
- Green peas - 50 grams (fresh or frozen)
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Begin by washing and trimming the cauliflower, then cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and sauté for another 30 seconds until fragrant.
- Stir in the diced carrot and bell pepper, cooking for 5 minutes until they begin to soften.
- Add the cauliflower rice to the skillet, followed by the cumin, cinnamon, salt, and black pepper. Mix well.
- Add the green peas and stir to combine. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Remove from heat and stir in the fresh parsley and lemon juice. Adjust seasoning if needed.
- Serve warm as a side dish or a main meal.
