  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Begin by washing and trimming the cauliflower, then cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains.
  3. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  4. Add the minced garlic and sauté for another 30 seconds until fragrant.
  5. Stir in the diced carrot and bell pepper, cooking for 5 minutes until they begin to soften.
  6. Add the cauliflower rice to the skillet, followed by the cumin, cinnamon, salt, and black pepper. Mix well.
  7. Add the green peas and stir to combine. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  8. Remove from heat and stir in the fresh parsley and lemon juice. Adjust seasoning if needed.
