Ingredients

  • Cauliflower - 300 grams
  • Lentils (brown or green) - 100 grams
  • Onion - 1 medium, thinly sliced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and then cook them in a pot with 300 ml of water for about 20-25 minutes, or until tender. Drain and set aside.
  2. While the lentils are cooking, remove the leaves from the cauliflower and cut it into florets. Pulse in a food processor until it resembles rice.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until they are caramelized, about 10-12 minutes, stirring frequently.
  4. Add the cauliflower rice to the skillet with the caramelized onions, along with the cooked lentils, cumin, coriander, salt, and black pepper. Stir well to combine and cook for an additional 5-7 minutes, or until the cauliflower is tender.
  5. Remove from heat, garnish with fresh parsley, and serve warm.
