Ingredients
- Cauliflower - 400 grams (1 medium head)
- Ground lamb or beef - 200 grams
- Pine nuts - 30 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, finely chopped
- Mint - 1 tablespoon, finely chopped
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Egg - 1, beaten (for binding)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and cook for an additional minute.
- Add the ground lamb or beef to the skillet, breaking it apart with a spatula. Cook until browned, about 7-10 minutes. Stir in the cinnamon, allspice, salt, and black pepper, followed by the pine nuts, parsley, and mint. Remove from heat and let cool slightly.
- In a large bowl, combine the cauliflower rice, meat mixture, and beaten egg. Mix well until everything is evenly combined.
- Shape the mixture into oval or round kebbeh shapes and place them on a baking sheet lined with parchment paper. Drizzle the remaining olive oil over the kebbeh.
- Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through. Serve hot with a side of yogurt or salad.
