- Cauliflower - 300 grams, chopped into small florets
- Flatbread or pita - 2 pieces

- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Tahini - 2 tablespoons (optional for drizzling)
- Feta cheese - 50 grams, crumbled (optional topping)
Steps
- Preheat the oven to 220°C (430°F).
- In a large bowl, combine the chopped cauliflower, olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Toss until the cauliflower is well coated.
- Spread the seasoned cauliflower on a baking sheet in a single layer and roast in the preheated oven for 15-20 minutes, or until tender and slightly golden, stirring halfway through.
- While the cauliflower is roasting, prepare the flatbreads by placing them on a baking sheet.
- Once the cauliflower is done, remove it from the oven and let it cool slightly before mixing in the chopped parsley and lemon juice.
- Top each flatbread with a generous amount of the roasted cauliflower mixture, spreading it evenly.
- Return the topped flatbreads to the oven and bake for an additional 5-7 minutes until the edges are crispy.
- If using, drizzle with tahini and sprinkle crumbled feta cheese over the top before slicing and serving.
