Ingredients

  • Cauliflower - 300 grams, chopped into small florets
  • Flatbread or pita - 2 pieces
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Tahini - 2 tablespoons (optional for drizzling)
  • Feta cheese - 50 grams, crumbled (optional topping)

Steps

  1. Preheat the oven to 220°C (430°F).
  2. In a large bowl, combine the chopped cauliflower, olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Toss until the cauliflower is well coated.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer and roast in the preheated oven for 15-20 minutes, or until tender and slightly golden, stirring halfway through.
  4. While the cauliflower is roasting, prepare the flatbreads by placing them on a baking sheet.
  5. Once the cauliflower is done, remove it from the oven and let it cool slightly before mixing in the chopped parsley and lemon juice.
  6. Top each flatbread with a generous amount of the roasted cauliflower mixture, spreading it evenly.
  7. Return the topped flatbreads to the oven and bake for an additional 5-7 minutes until the edges are crispy.
  8. If using, drizzle with tahini and sprinkle crumbled feta cheese over the top before slicing and serving.
