Ingredients

  • Cauliflower - 300 grams, chopped
  • Chickpeas - 100 grams, cooked
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • All-purpose flour - 4 tablespoons
  • Olive oil - 2 tablespoons (for frying)
  • Pita bread - 2 pieces
  • Tomato - 1, sliced
  • Cucumber - 1, sliced
  • Tahini - 4 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Steam the chopped cauliflower for about 10 minutes until soft, then allow it to cool slightly.
  2. In a large bowl, mash the steamed cauliflower and cooked chickpeas together until combined but still slightly chunky.
  3. Add the finely chopped onion, minced garlic, parsley, cumin, coriander, turmeric, salt, and black pepper to the bowl. Mix well to combine all the ingredients.
  4. Gradually add the all-purpose flour to the mixture, stirring until a cohesive dough forms. If it's too wet, add a little more flour.
  5. Shape the mixture into 4 equal patties.
  6. Heat olive oil in a non-stick skillet over medium heat. Fry the patties for about 4-5 minutes on each side until golden and crispy.
  7. While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, and a little water to reach your desired consistency.
  8. Once the patties are done, warm the pita bread in the skillet for about 1 minute on each side.
  9. Assemble the burgers by placing a kofta patty in each pita, topped with sliced tomatoes, cucumbers, and drizzled with tahini sauce.
