Cauliflower Kofta Burger

Ingredients
- Cauliflower - 300 grams, chopped
- Chickpeas - 100 grams, cooked
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- All-purpose flour - 4 tablespoons
- Olive oil - 2 tablespoons (for frying)
- Pita bread - 2 pieces
- Tomato - 1, sliced
- Cucumber - 1, sliced
- Tahini - 4 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Steam the chopped cauliflower for about 10 minutes until soft, then allow it to cool slightly.
- In a large bowl, mash the steamed cauliflower and cooked chickpeas together until combined but still slightly chunky.
- Add the finely chopped onion, minced garlic, parsley, cumin, coriander, turmeric, salt, and black pepper to the bowl. Mix well to combine all the ingredients.
- Gradually add the all-purpose flour to the mixture, stirring until a cohesive dough forms. If it's too wet, add a little more flour.
- Shape the mixture into 4 equal patties.
- Heat olive oil in a non-stick skillet over medium heat. Fry the patties for about 4-5 minutes on each side until golden and crispy.
- While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, and a little water to reach your desired consistency.
- Once the patties are done, warm the pita bread in the skillet for about 1 minute on each side.
- Assemble the burgers by placing a kofta patty in each pita, topped with sliced tomatoes, cucumbers, and drizzled with tahini sauce.
