Ingredients

  • Carrots - 300 grams, peeled and chopped

  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a medium pot over medium heat.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chopped carrots, ground cumin, and ground coriander, stirring well to combine.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes, or until the carrots are tender.
  6. Remove from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer it in batches to a blender.
  7. Season with salt, black pepper, and lemon juice to taste.
  8. Serve hot, garnished with fresh parsley.
