- Carrots - 300 grams, peeled and chopped
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a medium pot over medium heat.
- Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chopped carrots, ground cumin, and ground coriander, stirring well to combine.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes, or until the carrots are tender.
- Remove from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer it in batches to a blender.
