- Calamari tubes - 300 grams
- Zucchini - 150 grams, finely grated
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Almond flour - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine the grated zucchini, minced garlic, chopped parsley, lemon juice, salt, pepper, and paprika. Mix well.
- Stuff each calamari tube with the zucchini mixture, using a small spoon to pack it tightly. Leave the ends open to prevent spilling during cooking.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Sear the stuffed calamari for about 2-3 minutes on each side until golden brown.
- Transfer the seared calamari to a baking dish. Drizzle with the remaining olive oil and sprinkle almond flour over the top.
- Bake in the preheated oven for 10-15 minutes until the calamari are cooked through and the almond flour is golden.
- Remove from the oven and let it rest for a few minutes before serving.
