Ingredients

  • Calamari tubes - 300 grams
  • Zucchini - 150 grams, finely grated
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Almond flour - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine the grated zucchini, minced garlic, chopped parsley, lemon juice, salt, pepper, and paprika. Mix well.
  3. Stuff each calamari tube with the zucchini mixture, using a small spoon to pack it tightly. Leave the ends open to prevent spilling during cooking.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sear the stuffed calamari for about 2-3 minutes on each side until golden brown.
  5. Transfer the seared calamari to a baking dish. Drizzle with the remaining olive oil and sprinkle almond flour over the top.
  6. Bake in the preheated oven for 10-15 minutes until the calamari are cooked through and the almond flour is golden.
  7. Remove from the oven and let it rest for a few minutes before serving.
