Ingredients

  • Green cabbage - 200 grams, chopped
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 large, chopped
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced carrot and potato, cooking for another 5 minutes until slightly softened.
  4. Add the chopped cabbage and cook for an additional 5 minutes, stirring occasionally.
  5. Incorporate the chopped tomato, cumin, paprika, salt, and black pepper, mixing well.
  6. Pour in the vegetable broth and bring the mixture to a boil.
  7. Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the vegetables are tender.
  8. Remove from heat and stir in the lemon juice.
  9. Serve hot, garnished with fresh parsley.
