- Potato - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Tomato - 1 large, chopped
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Stir in the diced carrot and potato, cooking for another 5 minutes until slightly softened.
- Add the chopped cabbage and cook for an additional 5 minutes, stirring occasionally.
- Incorporate the chopped tomato, cumin, paprika, salt, and black pepper, mixing well.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the vegetables are tender.
- Remove from heat and stir in the lemon juice.
- Serve hot, garnished with fresh parsley.
