- Water - 250 ml
- Brown sugar - 50 grams
- Cinnamon powder - 1 teaspoon
- Ground almonds - 30 grams
- Pine nuts - 20 grams, toasted
- Olive oil - 1 tablespoon
- Salt - a pinch
Steps
- In a medium-sized bowl, rinse the bulgur wheat under cold water and then soak it in 250 ml of water for about 15 minutes until it softens.
- In a saucepan over medium heat, add the olive oil and diced tomatoes. Cook for about 5 minutes until the tomatoes start to break down.
- Add the soaked bulgur wheat to the saucepan along with the brown sugar, cinnamon, and a pinch of salt. Stir well to combine.
- Pour in an additional 100 ml of water if the mixture seems too dry, and bring it to a gentle simmer. Cover and cook for about 10-15 minutes, stirring occasionally, until the bulgur is tender and the flavors meld.
- Remove from heat and let it cool slightly before serving. Garnish with toasted pine nuts and ground almonds on top.
