Ingredients

  • Bulgur wheat - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the bulgur wheat under cold water and then soak it in warm water for about 15 minutes until it softens. Drain any excess water.
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red bell pepper and zucchini to the skillet. Cook for 5-7 minutes until they start to soften.
  4. Stir in the halved cherry tomatoes, soaked bulgur wheat, ground cumin, salt, and black pepper. Mix well and cook for another 5 minutes, allowing the flavors to meld.
  5. Remove from heat and add chopped fresh parsley and lemon juice. Toss to combine.
  6. Serve warm, garnished with additional parsley if desired.
