Ingredients
- Bulgur wheat - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Ground cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse the bulgur wheat under cold water and then soak it in warm water for about 15 minutes until it softens. Drain any excess water.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the skillet. Cook for 5-7 minutes until they start to soften.
- Stir in the halved cherry tomatoes, soaked bulgur wheat, ground cumin, salt, and black pepper. Mix well and cook for another 5 minutes, allowing the flavors to meld.
- Remove from heat and add chopped fresh parsley and lemon juice. Toss to combine.
- Serve warm, garnished with additional parsley if desired.
