Ingredients

  • Lamb shoulder - 500 grams, cut into chunks
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Beef or chicken broth - 250 milliliters
  • Plain full-fat yogurt - 200 grams
  • Fresh mint leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large, heavy-bottomed pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  3. Increase heat to medium-high and add the lamb chunks to the pot, browning them on all sides for about 8-10 minutes.
  4. Sprinkle in the ground cumin, coriander, paprika, salt, and black pepper, stirring to coat the lamb evenly with the spices.
  5. Pour in the broth, bringing the mixture to a gentle simmer. Cover the pot and reduce the heat to low, allowing the lamb to braise for about 60 minutes until tender.
  6. In a bowl, mix the plain yogurt with chopped mint and lemon juice. Set aside.
  7. Once the lamb is tender, remove it from the heat. Serve the braised lamb hot, drizzled with the yogurt mixture.
