Ingredients
- Lamb shoulder - 500 grams, cut into chunks
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Beef or chicken broth - 250 milliliters
- Plain full-fat yogurt - 200 grams
- Fresh mint leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large, heavy-bottomed pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Increase heat to medium-high and add the lamb chunks to the pot, browning them on all sides for about 8-10 minutes.
- Sprinkle in the ground cumin, coriander, paprika, salt, and black pepper, stirring to coat the lamb evenly with the spices.
- Pour in the broth, bringing the mixture to a gentle simmer. Cover the pot and reduce the heat to low, allowing the lamb to braise for about 60 minutes until tender.
- In a bowl, mix the plain yogurt with chopped mint and lemon juice. Set aside.
- Once the lamb is tender, remove it from the heat. Serve the braised lamb hot, drizzled with the yogurt mixture.
