- Filo pastry - 6 sheets
- Feta cheese - 100 grams, crumbled
- Ricotta cheese - 100 grams
- Parsley - 2 tablespoons, chopped
- Egg - 1, beaten
- Olive oil - 3 tablespoons
- Black pepper - 1/4 teaspoon
- Salt - 1/4 teaspoon
- Sesame seeds - 1 tablespoon (optional)
Steps
- Preheat the oven to 200°C (390°F).
- In a bowl, combine the crumbled feta cheese, ricotta cheese, chopped parsley, beaten egg, black pepper, and salt. Mix well until all ingredients are integrated.
- Lay one sheet of filo pastry on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush with oil again.
- Cut the layered filo sheets into 3 equal strips lengthwise.
- Place 1-2 tablespoons of the cheese filling at one end of each strip, fold the sides over the filling, and roll it up to form a tight cylinder. Repeat with the remaining strips and filling.
- Place the rolled boreks on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle sesame seeds if desired.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
