Ingredients

  • Filo pastry - 6 sheets
  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Parsley - 2 tablespoons, chopped
  • Egg - 1, beaten
  • Olive oil - 3 tablespoons
  • Black pepper - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a bowl, combine the crumbled feta cheese, ricotta cheese, chopped parsley, beaten egg, black pepper, and salt. Mix well until all ingredients are integrated.
  3. Lay one sheet of filo pastry on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush with oil again.
  4. Cut the layered filo sheets into 3 equal strips lengthwise.
  5. Place 1-2 tablespoons of the cheese filling at one end of each strip, fold the sides over the filling, and roll it up to form a tight cylinder. Repeat with the remaining strips and filling.
  6. Place the rolled boreks on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle sesame seeds if desired.
  7. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
  8. Remove from the oven and let cool slightly before serving.
