Borek is a delightful Lebanese breakfast pastry filled with a savory mixture of vegetables and spices, wrapped in crispy phyllo dough. This dairy-free version is light yet satisfying, making it a perfect start to your day.

Ingredients
- Phyllo dough - 4 sheets
- Olive oil - 4 tablespoons
- Spinach - 150 grams, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Pine nuts - 30 grams, toasted
- Cumin - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 200°C (400°F).
- In a pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
- Stir in the chopped spinach, cumin, paprika, salt, and black pepper. Cook until the spinach is wilted and any excess moisture has evaporated, about 5 minutes.
- Remove the pan from heat and mix in the toasted pine nuts and chopped parsley. Allow the mixture to cool slightly.
- Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again with oil.
- Spoon a portion of the spinach mixture along one edge of the phyllo, leaving about 2 cm of space from the edge. Roll the phyllo over the filling to form a log shape, tucking in the edges as you roll to seal the filling inside.
- Place the rolled borek seam-side down on a baking sheet lined with parchment paper. Repeat the process with the remaining phyllo sheets and filling.
- Brush the tops of the borek with the remaining olive oil.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
