Ingredients

  • Filo pastry - 6 sheets
  • Feta cheese - 150 grams, crumbled
  • Ricotta cheese - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Olive oil - 4 tablespoons
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the crumbled feta, ricotta, chopped parsley, chopped mint, black pepper, and salt. Mix well until combined.
  3. Lay one sheet of filo pastry on a clean surface and brush it lightly with olive oil. Layer another sheet on top and brush it again with olive oil.
  4. Place a generous spoonful of the cheese mixture at one end of the layered filo pastry. Fold the sides over the filling and roll it up tightly into a log shape.
  5. Repeat the process with the remaining filo sheets and cheese filling, placing the rolled boregs on a baking sheet lined with parchment paper.
  6. Brush the tops of the boregs with olive oil and sprinkle sesame seeds on top if using.
  7. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
  8. Remove from the oven and let cool slightly before serving.
