Ingredients

  • Milk - 500 ml
  • Sugar - 100 g
  • Cornstarch - 30 g
  • Heavy cream - 200 ml
  • Mastic gum - 1 g (finely crushed)
  • Pistachios - 30 g (chopped, for garnish)
  • Vanilla extract - 1 tsp

Steps

  1. In a saucepan, mix the cornstarch with 100 ml of the milk to create a slurry and set aside.
  2. In another saucepan, combine the remaining milk, sugar, and crushed mastic gum. Heat over medium-low heat until the sugar dissolves, stirring occasionally.
  3. Once the mixture is warm, add the cornstarch slurry while continuously stirring. Increase the heat slightly and bring to a gentle boil until the mixture thickens (about 5 minutes).
  4. Remove from heat and let it cool for about 10 minutes before adding the heavy cream and vanilla extract. Mix well.
  5. Transfer the mixture to a shallow container and cover it with plastic wrap. Freeze for at least 4 hours or until firm.
  6. Once frozen, let the Booza sit at room temperature for 5-10 minutes to soften slightly before scooping.
  7. Serve in bowls, garnished with chopped pistachios.
