Ingredients

  • Beetroot - 200 grams, cooked and grated
  • Bulgar wheat - 100 grams, fine
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Whole wheat burger buns - 2
  • Tahini sauce - for serving
  • Lettuce leaves - for serving
  • Tomato - 1, sliced

Steps

  1. In a bowl, soak the bulgar wheat in warm water for about 20 minutes until it absorbs the water and softens. Drain any excess water.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent, about 5 minutes.
  3. In a large mixing bowl, combine the grated beetroot, soaked bulgar wheat, sautéed onion and garlic, toasted pine nuts, chopped parsley, cumin, cinnamon, salt, and black pepper. Mix well until all ingredients are evenly combined.
  4. Form the mixture into two equal-sized patties, pressing firmly to hold their shape.
  5. In the same skillet, heat the remaining olive oil over medium heat. Cook the patties for about 4-5 minutes on each side until they are golden brown and heated through.
  6. While the patties are cooking, toast the whole wheat burger buns until lightly crisp.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, adding the beetroot kibbeh patty, topping with sliced tomatoes, and drizzling with tahini sauce. Cover with the top half of the bun.
  8. Serve the Beetroot Kibbeh Burgers warm with your choice of side.
