Ingredients

  • Beetroot - 200 grams, cooked and grated
  • Chickpeas - 1 cup, cooked and mashed
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Oats - 1/2 cup, ground
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons, for cooking
  • Whole wheat burger buns - 2
  • Tahini - 2 tablespoons, for sauce
  • Lemon juice - 1 tablespoon, for sauce
  • Water - 2 tablespoons, for sauce
  • Cucumber - 1/2, thinly sliced, for topping
  • Tomato - 1, sliced, for topping
  • Lettuce leaves - 2, for topping

Steps

  1. In a mixing bowl, combine the grated beetroot, mashed chickpeas, chopped onion, minced garlic, cumin, coriander, paprika, chopped parsley, ground oats, salt, and black pepper. Mix well until fully combined.
  2. Form the mixture into two equal patties.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, until they are golden brown and heated through.
  4. While the patties cook, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt until smooth and creamy.
  5. Toast the whole wheat burger buns in the same skillet for 1-2 minutes until lightly golden.
  6. Assemble the burger by placing a lettuce leaf on the bottom half of the bun, followed by the beetroot patty, cucumber slices, tomato slices, and a generous drizzle of tahini sauce. Top with the other half of the bun.
