- Chickpeas - 1 cup, cooked and mashed
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Oats - 1/2 cup, ground
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons, for cooking
- Whole wheat burger buns - 2
- Tahini - 2 tablespoons, for sauce
- Lemon juice - 1 tablespoon, for sauce
- Water - 2 tablespoons, for sauce
- Cucumber - 1/2, thinly sliced, for topping
- Tomato - 1, sliced, for topping
- Lettuce leaves - 2, for topping
Steps
- In a mixing bowl, combine the grated beetroot, mashed chickpeas, chopped onion, minced garlic, cumin, coriander, paprika, chopped parsley, ground oats, salt, and black pepper. Mix well until fully combined.
- Form the mixture into two equal patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, until they are golden brown and heated through.
- While the patties cook, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt until smooth and creamy.
- Toast the whole wheat burger buns in the same skillet for 1-2 minutes until lightly golden.
- Assemble the burger by placing a lettuce leaf on the bottom half of the bun, followed by the beetroot patty, cucumber slices, tomato slices, and a generous drizzle of tahini sauce. Top with the other half of the bun.
