- Beef stew meat - 300 grams
- Fresh okra - 150 grams
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, sliced
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Add the beef stew meat to the pot and brown on all sides for about 5-7 minutes.
- Stir in the sliced carrot, diced tomato, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another 2-3 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 30 minutes.
- After 30 minutes, add the fresh okra to the pot and continue to simmer for an additional 15 minutes, or until the beef is tender and the okra is cooked through.
- Stir in the fresh lemon juice before serving and garnish with chopped parsley.
