Ingredients

  • Ground beef (80% lean) - 300 grams
  • Garlic cloves - 2, minced
  • Onion - 1 small, finely grated
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon (for grilling)
  • Lemon - 1, for serving
  • Fresh cucumber - 100 grams, sliced (for side)

Steps

  1. In a large mixing bowl, combine the ground beef, minced garlic, grated onion, chopped parsley, cumin, coriander, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Divide the mixture into 4 equal portions and shape each portion into an elongated kofta (sausage shape) on skewers or directly on a grill pan.
  3. Preheat a grill or grill pan over medium-high heat and brush with olive oil to prevent sticking.
  4. Cook the kofta for about 4-5 minutes on each side, or until fully cooked and browned, reaching an internal temperature of 70°C (160°F).
  5. Remove from heat and let rest for a couple of minutes before serving.
  6. Serve the kofta with fresh cucumber slices and a wedge of lemon for squeezing over the top.
