Beef Fatayer
Beef Fatayer is a delicious Lebanese pastry filled with spiced minced beef, encased in a gluten-free dough that is crispy on the outside and tender on the inside. Perfect as an appetizer or main dish, it brings a taste of the Middle East to your table.

Ingredients
- Beef mince - 250 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Gluten-free all-purpose flour - 200 grams
- Xanthan gum - 1/2 teaspoon
- Warm water - 100 ml
- Egg - 1, beaten (for egg wash)
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic to the skillet and cook for another minute until fragrant.
- Stir in the minced beef, cumin, cinnamon, paprika, salt, and black pepper. Cook until the beef is browned and fully cooked, about 5-7 minutes.
- Remove the skillet from heat and stir in the chopped parsley. Allow the filling to cool slightly.
- In a mixing bowl, combine the gluten-free flour and xanthan gum. Gradually add warm water and 1 tablespoon of olive oil, mixing until a dough forms.
- Knead the dough for a few minutes until smooth. Cover with a cloth and let it rest for 15 minutes.
- Preheat your oven to 200°C (400°F).
- Divide the rested dough into 4 equal portions. Roll each portion out into a thin circle, about 12 cm in diameter.
- Place a spoonful of the beef filling in the center of each circle. Fold the edges over the filling and pinch to seal, forming a triangular shape.
- Place the fatayers on a baking sheet lined with parchment paper. Brush the tops with beaten egg.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Serve warm with a side of yogurt or a fresh salad.
