Ingredients

  • Beef mince - 250 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Gluten-free all-purpose flour - 200 grams
  • Xanthan gum - 1/2 teaspoon
  • Warm water - 100 ml
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic to the skillet and cook for another minute until fragrant.
  3. Stir in the minced beef, cumin, cinnamon, paprika, salt, and black pepper. Cook until the beef is browned and fully cooked, about 5-7 minutes.
  4. Remove the skillet from heat and stir in the chopped parsley. Allow the filling to cool slightly.
  5. In a mixing bowl, combine the gluten-free flour and xanthan gum. Gradually add warm water and 1 tablespoon of olive oil, mixing until a dough forms.
  6. Knead the dough for a few minutes until smooth. Cover with a cloth and let it rest for 15 minutes.
  7. Preheat your oven to 200°C (400°F).
  8. Divide the rested dough into 4 equal portions. Roll each portion out into a thin circle, about 12 cm in diameter.
  9. Place a spoonful of the beef filling in the center of each circle. Fold the edges over the filling and pinch to seal, forming a triangular shape.
  10. Place the fatayers on a baking sheet lined with parchment paper. Brush the tops with beaten egg.
  11. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  12. Serve warm with a side of yogurt or a fresh salad.
