Ingredients

  • Basmati rice - 150 grams
  • Ground beef - 200 grams
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Cinnamon powder - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Chicken or beef broth - 300 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for about 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced carrot to the pot, cooking for another 2-3 minutes until the carrot is tender.
  4. Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the cinnamon powder, allspice, salt, and black pepper, mixing well to incorporate the spices into the beef mixture.
  6. Drain the soaked rice and add it to the pot, stirring to combine with the beef and vegetables.
  7. Pour in the chicken or beef broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
  8. Remove the pot from heat and let it sit covered for an additional 5 minutes. Fluff the pilaf with a fork and stir in the chopped parsley and toasted pine nuts before serving.
