Ingredients
- Basmati rice - 150 grams
- Ground beef - 200 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Cinnamon powder - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Chicken or beef broth - 300 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 2 tablespoons, toasted
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for about 20 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced carrot to the pot, cooking for another 2-3 minutes until the carrot is tender.
- Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
- Stir in the cinnamon powder, allspice, salt, and black pepper, mixing well to incorporate the spices into the beef mixture.
- Drain the soaked rice and add it to the pot, stirring to combine with the beef and vegetables.
- Pour in the chicken or beef broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove the pot from heat and let it sit covered for an additional 5 minutes. Fluff the pilaf with a fork and stir in the chopped parsley and toasted pine nuts before serving.
