  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato paste - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Vegetable or beef broth - 1 liter
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrot, and celery, sautéing until softened, about 5-7 minutes.
  2. Add minced garlic, cumin, coriander, and turmeric, cooking for an additional 1-2 minutes until fragrant.
  3. Stir in the beef stew meat, browning it on all sides, approximately 5 minutes.
  4. Add tomato paste, salt, and black pepper, stirring well to coat the meat and vegetables.
  5. Pour in the broth and bring the mixture to a boil. Once boiling, reduce heat to low and simmer for 20 minutes.
  6. Add the lentils to the pot, cover, and continue to simmer for another 25-30 minutes or until the lentils and beef are tender.
  7. Adjust seasoning with additional salt and pepper if needed. Serve hot, garnished with fresh parsley.
