- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato paste - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon
- Vegetable or beef broth - 1 liter
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large pot over medium heat. Add the diced onion, carrot, and celery, sautéing until softened, about 5-7 minutes.
- Add minced garlic, cumin, coriander, and turmeric, cooking for an additional 1-2 minutes until fragrant.
- Stir in the beef stew meat, browning it on all sides, approximately 5 minutes.
- Add tomato paste, salt, and black pepper, stirring well to coat the meat and vegetables.
- Pour in the broth and bring the mixture to a boil. Once boiling, reduce heat to low and simmer for 20 minutes.
- Add the lentils to the pot, cover, and continue to simmer for another 25-30 minutes or until the lentils and beef are tender.
- Adjust seasoning with additional salt and pepper if needed. Serve hot, garnished with fresh parsley.
