- Ground beef - 300 grams
- Eggplant - 1 medium (about 250 grams)
- Tomato paste - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
- Water - 250 ml
Steps
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and ground beef to the pot. Cook until the beef is browned, breaking it apart with a wooden spoon, about 5-7 minutes.
- Stir in the tomato paste, cumin, paprika, salt, and black pepper. Mix well and cook for another 2 minutes.
- Add 250 ml of water, bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes, allowing the flavors to meld.
- While the beef is cooking, prepare the eggplant. Cut the eggplant into 1 cm cubes and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
- In a separate pan, heat the remaining tablespoon of olive oil over medium-high heat. Add the eggplant cubes and sauté until golden brown and tender, about 5-7 minutes.
- Once the beef has simmered, add the sautéed eggplant to the pot. Stir gently to combine and cook for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
