- Garlic - 3 cloves, minced
- Tomato paste - 2 tablespoons
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Beef broth - 2 cups
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the beef stew meat. Brown the beef on all sides, about 5-7 minutes.
- Stir in the tomato paste, cumin, coriander, cinnamon, turmeric, salt, and black pepper, cooking for another 2-3 minutes to toast the spices.
- Add the diced carrot and potato to the pot, followed by the beef broth. Bring to a simmer.
- Cover the pot and reduce the heat to low. Let it simmer for about 30 minutes, or until the beef is tender.
- Add the drained chickpeas and cook for an additional 10 minutes, uncovered, to heat through.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
