- Beef (chuck or stew meat) - 200 grams, cut into 2.5 cm cubes
- Canned chickpeas - 1 cup (240 grams), drained and rinsed
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato paste - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon, or to taste
- Black pepper - 1/2 teaspoon, or to taste
- Olive oil - 2 tablespoons
- Beef broth - 4 cups (1 liter)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Lemon wedges - for serving
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes, or until it becomes translucent.
- Add the minced garlic, diced carrot, and diced celery to the pot. Sauté for an additional 5 minutes until the vegetables are softened.
- Stir in the beef cubes and cook until browned on all sides, about 5-7 minutes.
- Add the tomato paste, cumin, coriander, paprika, salt, and black pepper. Stir well to coat the beef and vegetables with the spices.
- Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 20 minutes.
- After 20 minutes, add the drained chickpeas to the pot. Stir and continue to simmer for another 10 minutes to heat through.
- Taste and adjust the seasoning if necessary. Remove from heat.
- Serve the soup hot, garnished with fresh parsley and lemon wedges on the side.
