Ingredients

  • Beef (chuck or stew meat) - 200 grams, cut into 2.5 cm cubes
  • Canned chickpeas - 1 cup (240 grams), drained and rinsed
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato paste - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon, or to taste
  • Black pepper - 1/2 teaspoon, or to taste
  • Olive oil - 2 tablespoons
  • Beef broth - 4 cups (1 liter)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon wedges - for serving

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes, or until it becomes translucent.
  2. Add the minced garlic, diced carrot, and diced celery to the pot. Sauté for an additional 5 minutes until the vegetables are softened.
  3. Stir in the beef cubes and cook until browned on all sides, about 5-7 minutes.
  4. Add the tomato paste, cumin, coriander, paprika, salt, and black pepper. Stir well to coat the beef and vegetables with the spices.
  5. Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 20 minutes.
  6. After 20 minutes, add the drained chickpeas to the pot. Stir and continue to simmer for another 10 minutes to heat through.
  7. Taste and adjust the seasoning if necessary. Remove from heat.
  8. Serve the soup hot, garnished with fresh parsley and lemon wedges on the side.
