  • Potatoes - 200 grams, diced
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red chili flakes - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Boil the diced potatoes in salted water for about 10 minutes until tender, then drain and set aside.

  4. Add the boiled potatoes to the skillet and gently toss to coat them in the seasoning mixture. Cook for an additional 5-7 minutes, allowing the potatoes to crisp up slightly.
  5. Remove from heat and stir in the chopped parsley and lemon juice.
  6. Spread the potato mixture evenly over the gluten-free pizza base.
  7. Sprinkle crumbled feta cheese and toasted pine nuts on top.
  8. Bake in the preheated oven for 15-20 minutes or until the edges of the pizza are golden and crispy.
  9. Remove from the oven, let cool for a few minutes, slice, and serve warm.
