Ingredients
- Potatoes - 400 grams
- Olive oil - 3 tablespoons
- Garlic - 4 cloves, minced
- Fresh cilantro - 30 grams, chopped
- Fresh parsley - 30 grams, chopped
- Red bell pepper - 1 medium, diced
- Chili flakes - 1 teaspoon
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Ground cumin - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Peel and dice the potatoes into small cubes.
- In a large bowl, toss the diced potatoes with 2 tablespoons of olive oil, salt, ground cumin, and chili flakes until evenly coated.
- Spread the potatoes on a baking sheet in a single layer and roast in the preheated oven for 20-25 minutes, or until golden and crispy, stirring halfway through.
- While the potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the diced red bell pepper to the skillet and cook for another 3-4 minutes until softened.
- Once the potatoes are done, remove them from the oven and combine them with the sautéed garlic and red bell pepper.
- Stir in the chopped cilantro, parsley, and lemon juice until well combined.
- Serve warm, garnished with extra herbs if desired.
