Ingredients

  • Potatoes - 400 grams
  • Olive oil - 3 tablespoons
  • Garlic - 4 cloves, minced
  • Fresh cilantro - 30 grams, chopped
  • Fresh parsley - 30 grams, chopped
  • Red bell pepper - 1 medium, diced
  • Chili flakes - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Ground cumin - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the potatoes into small cubes.
  3. In a large bowl, toss the diced potatoes with 2 tablespoons of olive oil, salt, ground cumin, and chili flakes until evenly coated.
  4. Spread the potatoes on a baking sheet in a single layer and roast in the preheated oven for 20-25 minutes, or until golden and crispy, stirring halfway through.
  5. While the potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  6. Add the diced red bell pepper to the skillet and cook for another 3-4 minutes until softened.
  7. Once the potatoes are done, remove them from the oven and combine them with the sautéed garlic and red bell pepper.
  8. Stir in the chopped cilantro, parsley, and lemon juice until well combined.
  9. Serve warm, garnished with extra herbs if desired.
