Ingredients
- Semolina - 100 grams
- Granulated sugar - 100 grams
- Plain yogurt - 100 grams
- Baking powder - 1 teaspoon
- Unsalted butter - 30 grams, melted
- Desiccated coconut - 30 grams
- Almonds - 4 whole, for garnish
- Water - 100 ml
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the semolina, sugar, yogurt, baking powder, melted butter, and desiccated coconut. Mix well until a smooth batter forms.
- Pour the batter into a greased 20 cm (8-inch) baking dish, smoothing out the top with a spatula.
- Using a sharp knife, score the surface of the batter into diamond shapes and place an almond in the center of each diamond.
- Bake in the preheated oven for 30 minutes, or until golden brown.
- While the basbousa is baking, prepare the syrup by combining water, sugar, and lemon juice in a saucepan. Bring to a boil, then simmer for 10 minutes until slightly thickened.
- Once the basbousa is baked, remove it from the oven and immediately pour the hot syrup over the cake.
- Let it cool for at least 15 minutes before cutting and serving.
