- Pearl barley - 100 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 1 liter
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the pearl barley under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are soft.
- Add the minced garlic, cumin, coriander, salt, and black pepper. Cook for another 2 minutes until fragrant.
- Add the rinsed barley to the pot and stir to combine with the vegetables and spices.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for about 25-30 minutes, or until the barley is tender.
- Once cooked, stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
- Serve hot, garnished with additional parsley if desired.
