Ingredients

  • Pearl barley - 100 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 1 liter
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the pearl barley under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are soft.
  3. Add the minced garlic, cumin, coriander, salt, and black pepper. Cook for another 2 minutes until fragrant.
  4. Add the rinsed barley to the pot and stir to combine with the vegetables and spices.
  5. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for about 25-30 minutes, or until the barley is tender.
  6. Once cooked, stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
  7. Serve hot, garnished with additional parsley if desired.
