- Zucchini - 1 medium (about 200 grams)
- Tomatoes - 400 grams, crushed
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).
- Stir in the crushed tomatoes, cumin, coriander, salt, and black pepper. Cook for about 5 minutes until the mixture thickens slightly.
- Add the okra to the skillet, stirring to coat it in the tomato sauce. Cook for another 10 minutes.
- While the stew simmers, spiralize the zucchini to create zoodles.
- Once the okra is tender, add the zoodles to the skillet and toss gently. Cook for an additional 2-3 minutes until the zucchini is slightly softened.
- Remove from heat, stir in the lemon juice and chopped parsley, and serve hot.
