Ingredients

  • Okra - 200 grams
  • Zucchini - 1 medium (about 200 grams)
  • Tomatoes - 400 grams, crushed
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).
  3. Stir in the crushed tomatoes, cumin, coriander, salt, and black pepper. Cook for about 5 minutes until the mixture thickens slightly.
  4. Add the okra to the skillet, stirring to coat it in the tomato sauce. Cook for another 10 minutes.
  5. While the stew simmers, spiralize the zucchini to create zoodles.
  6. Once the okra is tender, add the zoodles to the skillet and toss gently. Cook for an additional 2-3 minutes until the zucchini is slightly softened.
  7. Remove from heat, stir in the lemon juice and chopped parsley, and serve hot.
