- Okra - 300 grams, trimmed
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Tomatoes - 400 grams, diced (canned or fresh)
- Tomato paste - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 250 ml
Steps
- Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced tomatoes, tomato paste, cumin, salt, and black pepper. Cook for about 10 minutes until the mixture thickens slightly.
- Add the trimmed okra to the pan and stir to coat with the tomato mixture.
- Pour in the water and bring to a gentle simmer. Cover the pan and let it cook for about 15-20 minutes, or until the okra is tender.
- Once cooked, stir in the chopped cilantro and lemon juice. Adjust seasoning if needed.
- Serve hot, accompanied by rice or bread.
