Ingredients

  • Okra - 300 grams, trimmed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Tomatoes - 400 grams, diced (canned or fresh)
  • Tomato paste - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 250 ml

Steps

  1. Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the diced tomatoes, tomato paste, cumin, salt, and black pepper. Cook for about 10 minutes until the mixture thickens slightly.
  4. Add the trimmed okra to the pan and stir to coat with the tomato mixture.
  5. Pour in the water and bring to a gentle simmer. Cover the pan and let it cook for about 15-20 minutes, or until the okra is tender.
  6. Once cooked, stir in the chopped cilantro and lemon juice. Adjust seasoning if needed.
  7. Serve hot, accompanied by rice or bread.
