Ingredients

  • Okra - 200 grams, sliced

  • Tomatoes - 400 grams, chopped (or canned)
  • Vegetable broth - 500 ml
  • Cilantro - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the chopped tomatoes and cook for about 5 minutes until they begin to break down.
  4. Add the sliced okra to the pot and stir well to combine with the tomato mixture.
  5. Pour in the vegetable broth and bring the soup to a gentle simmer.
  6. Season with salt, black pepper, cumin, and paprika. Simmer for 15-20 minutes until the okra is tender.
  7. Stir in the chopped cilantro and lemon juice just before serving.
  8. Taste and adjust seasoning if needed, then ladle the soup into bowls and serve warm.
