Ingredients

  • Okra - 300 grams
  • Olive oil - 4 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Tomatoes - 400 grams, diced (or 1 can of diced tomatoes)
  • Tomato paste - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Water - 200 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash the okra and trim the ends, then set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Stir in the diced tomatoes, tomato paste, cinnamon, allspice, salt, and black pepper. Cook for 5-7 minutes until the mixture thickens slightly.
  6. Add the okra to the skillet, stirring to coat it in the sauce. Pour in the water and bring to a gentle simmer for about 10 minutes.
  7. Remove from heat and stir in the chopped parsley and lemon juice.
  8. Transfer the mixture to a baking dish and spread it evenly. Cover with aluminum foil.
  9. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes to allow the top to slightly brown.
  10. Serve warm, garnished with extra parsley if desired.
