- Okra - 300 grams
- Olive oil - 4 tablespoons
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Tomatoes - 400 grams, diced (or 1 can of diced tomatoes)
- Tomato paste - 1 tablespoon
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Water - 200 ml
Steps
- Preheat the oven to 180°C (350°F).
- Wash the okra and trim the ends, then set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the diced tomatoes, tomato paste, cinnamon, allspice, salt, and black pepper. Cook for 5-7 minutes until the mixture thickens slightly.
- Add the okra to the skillet, stirring to coat it in the sauce. Pour in the water and bring to a gentle simmer for about 10 minutes.
- Remove from heat and stir in the chopped parsley and lemon juice.
- Transfer the mixture to a baking dish and spread it evenly. Cover with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes to allow the top to slightly brown.
- Serve warm, garnished with extra parsley if desired.
