Ingredients

  • Okra - 300 grams, fresh or frozen
  • Beef stew meat - 250 grams, cut into 2.5 cm cubes
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Tomatoes - 400 grams, diced (canned or fresh)
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 ml
  • Fresh lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and beef stew meat to the pot, stirring occasionally until the meat is browned on all sides, about 8-10 minutes.
  3. Stir in the diced tomatoes, tomato paste, ground cumin, ground coriander, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld.
  4. Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 30 minutes, or until the meat becomes tender.
  5. Add the okra to the pot and continue to simmer for an additional 10-15 minutes, until the okra is cooked through.
  6. Finally, stir in the fresh lemon juice and taste for seasoning, adjusting if necessary. Remove from heat.
  7. Serve hot, garnished with fresh parsley, alongside rice or bread if desired.
