- Okra - 300 grams, fresh or frozen
- Beef stew meat - 250 grams, cut into 2.5 cm cubes
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Tomatoes - 400 grams, diced (canned or fresh)
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 ml
- Fresh lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and beef stew meat to the pot, stirring occasionally until the meat is browned on all sides, about 8-10 minutes.
- Stir in the diced tomatoes, tomato paste, ground cumin, ground coriander, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 30 minutes, or until the meat becomes tender.
- Add the okra to the pot and continue to simmer for an additional 10-15 minutes, until the okra is cooked through.
- Finally, stir in the fresh lemon juice and taste for seasoning, adjusting if necessary. Remove from heat.
- Serve hot, garnished with fresh parsley, alongside rice or bread if desired.
