- Okra - 300 grams, fresh or frozen
- Beef stew meat - 250 grams, cut into cubes
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 400 grams
- Vegetable oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Water - 500 milliliters
- Fresh parsley - for garnish
Steps
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Add the beef cubes to the pot and brown on all sides, about 5-7 minutes.
- Stir in the tomato paste, diced tomatoes, ground cumin, ground coriander, salt, black pepper, and paprika. Mix well to combine.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low and cover the pot. Let it simmer for 30 minutes.
- After 30 minutes, add the okra to the pot and stir gently. Cover and continue to simmer for another 15 minutes until the okra is tender and the meat is cooked through.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
