Ingredients

  • Gluten-Free Phyllo Dough - 8 sheets
  • Mixed Nuts (walnuts, pistachios, almonds) - 100 grams, finely chopped
  • Unsalted Butter - 75 grams, melted
  • Ground Cinnamon - 1 teaspoon
  • Sugar - 50 grams
  • Honey - 60 ml
  • Water - 60 ml
  • Vanilla Extract - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the finely chopped mixed nuts with ground cinnamon and set aside.
  3. Brush a small baking dish with melted butter and layer 4 sheets of gluten-free phyllo dough, brushing each sheet with butter before adding the next.
  4. Spread half of the nut mixture evenly over the layered phyllo.
  5. Layer 2 more sheets of phyllo dough on top, brushing each with butter, then add the remaining nut mixture.
  6. Top with the final 2 sheets of phyllo dough, brushing each with butter.
  7. Using a sharp knife, cut the baklava into diamond or square shapes.
  8. Bake in the preheated oven for 30 minutes or until golden brown.
  9. While the baklava is baking, prepare the syrup by combining honey, water, sugar, and vanilla extract in a small saucepan over medium heat. Stir until sugar is dissolved, then simmer for 5 minutes.
  10. Once the baklava is done, remove it from the oven and immediately pour the hot syrup over it.
  11. Allow the baklava to cool for at least 15 minutes before serving.
